Mongolian Beef & Noodles

I wanted to do something a little different with the ground beef I had defrosted. Mongolian Beef & Noodles! It was really good with a little bit of kick. It also comes together really quickly, which is really awesome!

8 oz. Fettuccine or Linguini

2 lbs Ground Beef

2 Tablespoons Cornstarch

1 Tablespoon Hoisin Sauce

½ teaspoon Cumin

2 Tablespoons Brown Sugar

1 teaspoon Chinese Five Spice

1 teaspoon Garlic Chile Paste

1 teaspoon Garlic Powder

Pinch of Red Pepper Flakes

1 cup Onion; chopped

1 cup Carrot; shredded

1 cup Zucchini; shredded

3 cloves Garlic; minced

½ cup Soy Sauce

1 cup Beef Broth

  1. Bring a pot of liberally salted water to a boil. Cook the pasta until almost al dente; about 10 minutes. 
  2. Meanwhile, heat a large skillet over medium heat and brown the beef until no longer pink. 
  3. Drain, then add the spices, seasonings, soy sauce, broth and vegetables. Continue to cook until the sauce has thickened before adding the pasta. 
  4. Toss the pasta in the meat sauce until al dente; about 2 minutes. 
  5. Enjoy!
