Cheesy Bacon & Broccoli Stuffed Chicken

This is absolutely delish! It uses humble ingredients, but packs a ton of flavor. If you’re not a fan of broccoli then asparagus, green onions and zucchini make great alternatives. Or, you can omit the veggies altogether and make it a cheesy masterpiece!

Chicken:

4 large Chicken Breasts

Salt and Pepper to taste

½ cup Italian Breadcrumbs

1 cup Cheddar Cheese

Filling: 

6 oz. Cream Cheese; softened

1 cup Cheddar Cheese

1 ½ cups Broccoli; chopped

⅓ cup Bacon Crumbles

½ teaspoon Onion Powder

½ teaspoon Garlic Powder

⅓ teaspoon dried Italian Herbs

Salt and Pepper to taste

  1. Preheat oven to 400°F.
  2. In a medium bowl, combine the filling ingredients until thoroughly combined. 
  3. Butterfly the chicken breasts and add 1/4 of the filling to the center of each breast. Fold the chicken over itself and secure with a toothpick if desired. 
  4. Place the breasts in a baking dish and sprinkle the Italian breadcrumbs and cheddar cheese over top. Cover with foil and bake for 35 minutes. Remove the foil and bake an additional 10 minutes or until the cheese is golden brown. 
  5. Enjoy!
