
We decided on Cherry Chicken Salad Lettuce Wraps today. They were just what we needed! So light and delicious. Lettuce makes a delicious, crispy substitute for bread with this classic salad.


12-15 Lettuce Leaves; rinsed and dried
Toasted Walnuts (optional)
Tomato Slices (optional)

Chicken Salad:
20 oz. canned Chicken Breast
⅔ cup Celery; chopped
½ cup Onion; chopped
1 teaspoon Garlic Powder
1 teaspoon Smoked Paprika
½ teaspoon Celery Seeds
½ cup Pumpkin Seeds
1 cup Apple; chopped
½ cup Cherries; pitted & chopped
⅔ cup Mayonnaise
1 teaspoon Apple Cider Vinegar
Salt and Pepper to taste

Drain the chicken breast and add it to a large mixing bowl.

Add the remaining ingredients and fold using a rubber spatula until combined. Taste and season accordingly.

Cover and place in the fridge, chilling for at least 20 minutes.

Scoop roughly ½ cup of filling into each lettuce leaf and top with walnuts and tomato slices.
