Cheesy Corn Casserole

Corn overload! 😂 Summer’s here which means the return of fresh sweet corn. I love bringing this dish to cookouts and potlucks. 🤩

  • 3 cups Sweet Corn
  • 1/4 cup Onion; chopped
  • 1 can Cream of Corn
  • 1/2 teaspoon Garlic Powder
  • Salt and Pepper to taste
  • 2 cups Cheddar Cheese; divided
  1. Preheat oven to 375°F.
  2. In a medium bowl, combine the corn, onion, cream of corn, garlic powder, salt, pepper and half of the cheese. Scoop into a baking dish and top with the remaining cheese. Cover with foil and bake for 15 minutes. 
  3. Remove the foil and baking an additional 5 minutes or until the cheese is golden brown and the edges of the dish are bubbly.
  4. Enjoy!
