Sloppy Joe Stuffed Peppers

I was craving Sloppy Joes something fierce. I’m still *mostly* rocking the low-carb thing, so Sloppy Joe Stuffed Peppers it is! They turned out great! Definitely making these again!

2 large Bell Peppers; halved and cored

1 ½ cups Mozzarella Cheese; shredded

Sloppy Joe Mix:

1 lb Ground Beef

½ cup Tomatoes; chopped

1 cup Onion; chopped

2 cloves Garlic; finely minced

1 cup Ketchup

½ teaspoon Dijon Mustard

1 teaspoon Apple Cider Vinegar

1 Tablespoon Coconut Sugar

½ teaspoon Garlic Powder

Pinch of Italian Herbs

Salt and Pepper to taste

Water

Preheat oven to 400°F. 

Heat a skillet over medium-high heat. Once hot, add the onion and beef. Cook until the beef is no longer pink, then drain. Add the tomatoes and garlic, cooking until the garlic is fragrant.

Reduce the heat to medium-low and mix in the ketchup, mustard, vinegar, sugar, spices and seasoning. Pour in water until it reaches your desired consistency.

Place the peppers in a baking dish, fill with the sloppy Joe mix and top with the cheese. Bake for 20 minutes or until the cheese is melted and the pepper is tender.
