Cheesy Asparagus Stuffed Chicken Breasts

I love chicken, cheese and asparagus! Naturally Cheesy Asparagus Stuffed Chicken Breasts is one of my favorite dishes. I also made some Garlicky Mushroom Quinoa Rice on the side.

4 large Chicken Breasts

1 teaspoon Smoked Paprika

1 teaspoon Garlic Powder

Salt and Pepper to taste

1 package Boursin Cheese

12 Asparagus Spears

1 cup Parmesan Cheese

Preheat oven to 400°F.

Bring a pot of water with a steamer basket to a boil. Add the asparagus and steam for 5 minutes, or until al dente.

Butterfly the chicken breasts and season with the paprika, garlic powder, salt and pepper.

Place the Boursin cheese in a microwave safe dish and nuke in 10 second increments until soft and spreadable. 

Scoop 1/4 of the cheese into the center of each chicken breast and spread in an even layer. Place 3 asparagus spears over the cheese and fold the chicken over itself.

Place the breasts in a baking dish and sprinkle the parmesan cheese over top. Cover with foil and bake for 35 minutes, or until the internal temperature reaches 165°F
