Frito Taco Salad

This is such a great weeknight meal. It’s quick, cheap and so delicious! For a lighter option try ground turkey. This is also a great way of hiding vegetables from finicky kids and adults alike!

Taco Meat:

2 lbs Ground Beef

2 cups Yellow Squash; cored and minced

⅔ cup Taco Seasoning

or:

2 Tablespoons Chili Powder

1 teaspoon Garlic Powder

1 Tablespoon Smoked Paprika

½ teaspoon Cajun Seasoning

½ teaspoon Onion Powder

¼ teaspoon Cumin

¼ teaspoon Dried Oregano

Pinch of Cayenne Pepper

Salt and Pepper to taste

Sautéed Vegetables:

1 Tablespoon Olive Oil

1 cup Bell Peppers; cored and chopped

1 cup Red Onion; chopped

Salt and Pepper to taste

Toppings:

2 cups Shredded Lettuce

1 cup Chili Corn

1 cup Tomatoes; cored and chopped

½ cup Black Olive; sliced

1 cup Black Beans

½ cup Sour Cream

2 cups Fritos or Doritos

  1. Heat a dutch oven over medium-high heat and brown the beef until cooked through. Drain and add the squash, continuing to cook until tender before adding in the spices and seasonings. Cover and set aside.
  2. Meanwhile, heat a skillet over medium heat and add the olive oil. Once hot, sauté the onions and peppers until tender and season with salt and pepper to taste.
  3. In a bowl, add the taco meat, vegetables and desired toppings. Top with Fritos or Doritos and serve.
  4. Enjoy!
