
This is such a great weeknight meal. It’s quick, cheap and so delicious! For a lighter option try ground turkey. This is also a great way of hiding vegetables from finicky kids and adults alike!


Taco Meat:
2 lbs Ground Beef
2 cups Yellow Squash; cored and minced
⅔ cup Taco Seasoning
or:
2 Tablespoons Chili Powder
1 teaspoon Garlic Powder
1 Tablespoon Smoked Paprika
½ teaspoon Cajun Seasoning
½ teaspoon Onion Powder
¼ teaspoon Cumin
¼ teaspoon Dried Oregano
Pinch of Cayenne Pepper
Salt and Pepper to taste

Sautéed Vegetables:
1 Tablespoon Olive Oil
1 cup Bell Peppers; cored and chopped
1 cup Red Onion; chopped
Salt and Pepper to taste

Toppings:
2 cups Shredded Lettuce
1 cup Chili Corn
1 cup Tomatoes; cored and chopped
½ cup Black Olive; sliced
1 cup Black Beans
½ cup Sour Cream
2 cups Fritos or Doritos

- Heat a dutch oven over medium-high heat and brown the beef until cooked through. Drain and add the squash, continuing to cook until tender before adding in the spices and seasonings. Cover and set aside.
- Meanwhile, heat a skillet over medium heat and add the olive oil. Once hot, sauté the onions and peppers until tender and season with salt and pepper to taste.
- In a bowl, add the taco meat, vegetables and desired toppings. Top with Fritos or Doritos and serve.
