Leftover Thanksgiving Meatloaf Sandwiches

Day 6 of my 8 week #PantryChallenge

I can’t be the only one who looks forward to Meatloaf Sandwiches the day after making meatloaf for dinner. Served with minced potato fritters and a homemade sweet horseradish sauce. Yeah, they’re just air fried tater-tots and Bloomin’ Onion Sauce…  

2 – 1″ slices of Cranberry Sauce Turkey Meatloaf

1 cup leftover Mashed Potatoes

2 slices of Onion

2 slices of Tomato

2 Lettuce Leaves

2 Tablespoons Ketchup

2 Hamburger Buns

  1. Heat a skillet over medium heat and add a drizzle of olive oil. Add the meatloaf and sear until heated through.
  2. Add the mashed potatoes to a medium saucepan and heat through.
  3. Assemble the burgers and enjoy!
