Italian Dressed Pork and Vegetables

Italian Dressed Pork and Vegetables Recipe by Ash's In The Kitchen

I love homemade Italian Dressing! The flavor is so much more amazing than anything you can find bottled in stores and you can pronounce all of it’s ingredients, which is always a plus in my book. This was such a delicious, inexpensive and quick meal! Just 30 minutes and dinner is served. It goes great over a wide varieties of pastas as well as rice, barley or quinoa.

Italian Dressing:

½ cup Olive Oil

⅓ cup Red Wine Vinegar

2 Tablespoons Lemon Juice

1 Tablespoon Garlic Powder (or 2 Garlic cloves; minced)

1 Tablespoon Italian Herbs

1 teaspoon Basil

1 Tablespoon Garlic Salt

1 Tablespoon Black Pepper

1 Tablespoon Sugar

Pinch of Red Pepper Flakes

⅓ cup Parmesan

2 lbs Pork Loin; cubed

1 large Zucchini; Chopped

2 large Carrots peeled and chopped

3 large Tomatoes; quartered

1 cup Onion; sliced

1 cup Broccoli Florets

1 cup Bell Peppers; sliced

1 cup Radishes; halved 

Salt and Pepper to taste

  1. Add all of the dressing ingredients into a mason jar and shake vigorously until combined then set aside.
  2. 2. Preheat oven to 370°F.
  3. Add the vegetables and pork to a large bowl and pour the dressing over top. Mix until well coated and place in the fridge while the oven preheats. (you can also marinate overnight for a deeper flavor.)
  4. Line a baking sheet with parchment paper and spread the pork and vegetables over top. Sprinkle with salt and fresh cracked pepper and roast for 25 minutes.
  5. Enjoy!
