French Onion Chicken with Chipotle Gravy

French Onion Chicken Chipotle Gravy Recipe by Ash's In The Kitchen

I had a half used can of French Fried Onions that I had to use up and chicken breasts in the fridge. Sounds like dinner to me. Whipped up some Garlic Herb Mashed Potatoes and steamed some broccoli for sides and dinner is served!

  • Chicken:
    • 4 Chicken Breasts
    • 3 Tablespoons Mayo
    • 2 Tablespoons Dijon Mustard
    • Salt and Pepper to taste
    • 2 cups French Fried Onions
    • 2 Tablespoons Flour
  • Gravy:
    • 1 Tablespoon Bacon Grease or Butter
    • 1 Tablespoon Red Onion; finely chopped
    • 1 Tablespoon Bell Pepper; finely chopped
    • 1 clove Garlic; finely minced
    • 1 teaspoon Chipotle Powder
    • ½ teaspoon Smoked Paprika
    • 1 cup Flour
    • 2 cups Milk
    • Salt and Pepper to taste

  1. In a large bowl, add chicken, mayo, mustard, salt and pepper; toss until evenly coated. Cover and place in the fridge for 1 hour to overnight.
  2. Add french fried onions, flour, salt and pepper to a pie plate or ziplock bag; mash thoroughly.
  3. Preheat oven to 400° F.
  4. Remove each chicken breast and toss in french onion mixture then place on baking sheet lined with parchment paper and a metal rack. Bake for 20-22 minutes or until the internal temperature reaches 165° F.
  5. Meanwhile, in a medium saucepan over medium heat add add grease, onions; peppers and garlic and sweat until translucent and fragrant. Sprinkle in flour and cook until golden brown. Slowly pour in milk and add seasoning; tasting as you go. Whisk until thickened.
  6. Serve chicken over mashed potatoes or rice and pour gravy over top.
  7. Enjoy!
