
Nothing like some smoked Salmon topped with homemade Pesto, Green Beans tossed in olive oil and Parmesan with toasted almonds and Mushrooms braised in balsamic vinegar!
Smoked Pesto Salmon
- 1 cup Basil Pesto
- 1 large Salmon Filet
- 1 Tablespoon Olive Oil
- Salt and Pepper to taste
- Preheat smoker or grill to 250°F.
- Place the filet on a sheet pan and drizzle with oil. Season with salt and pepper then spoon the pesto over top.
- Smoke for 1 hour or until the fish is flaky and the internal temperature reaches 145°F.
- Serve immediately and enjoy!
