Smoked Pesto Salmon

Nothing like some smoked Salmon topped with homemade pesto, Green Beans tossed in olive oil and Parmesan with toasted almonds and Mushrooms braised in balsamic vinegar.

Smoked Pesto Salmon

• 4 Cups fresh basil
• 4 cloves Garlic
• 1/4 C fresh Parmesan; grated
• 1/2 Cup Olive Oil
• Salt and Pepper to taste

• 1 large Salmon Filet
• 1 Tablespoon Olive Oil
• Salt and Pepper to taste

1. Add basil, garlic, Parmesan, salt and pepper to food processor. Pulse ingredients as you slowly pour in olive oil.
2. Preheat smoker or grill to 375°f.
3. Place filet on stoneware (or metal) sheet pan. Drizzle with oil and sprinkle with salt and pepper.
4. Spoon pesto over top and spread evenly. Place fish in smoker and cook for 20 minutes or until fish is flaky, but not dry.
