
I made Pesto Pulled Pork Garlic Bread last night with Parmesan Herb French Fries for dinner last night and had the leftovers for lunch. So delicious! Garlic, Basil, Parmesan and Pork are a match made in heaven!


Pulled Pork:
4 large Pork Chops
2 cups Pork Broth
1 cup Basil Pesto
1 medium Onion; sliced
1 teaspoon Garlic Powder
Salt and Pepper to taste

Garlic Bread:
1 loaf Prepared Garlic Bread
1 cup Onion; sliced
3 Tablespoons Basil Pesto
¼ cup Mayonnaise
5 slices Fresh Mozzarella

- Season the pork chops with salt and pepper, then place in a slow cooker with the broth, onion, pesto and garlic powder. Slow cook on low for 8 hours.
- In a small bowl, combine the pesto and mayo. Separate the two halves of the garlic bread and spread the pesto mayo evenly over top.
- Preheat oven to 400°F.
- Shred the pork and add it, the onion and the mozzarella to the garlic bread. Wrap the sandwich tightly in foil and bake for 15 minutes.
